I know you're going to get 1000's of opinions on this one.. I abasolutely am a fan of Mother's Leather Cleaner and Leather Conditioner.. I use Mother's products on all of my vehicles and have never had a problem.. Their tire shine is a bit thick, but It looks really good after a nice wash..

all the above are good options for regular maintenance. they are relatively inexpensive and usually available over the counter. just make sure you keep the seats clean.

because most leather in new vehicles is coated, the cleaners and protectants dont really go beyond the synthetic protection on the leather, therefore, a wash with a microfibre and warm water really suffices. The only advantage to the added protectant is the varying degrees of gloss it can leave. be warned though, some of these leave the leather greasy feeling or slippery.

if youre looking for an all out sealant, carpro has a great product cquartz fabric and leather coating...it is amazing.

to the list above of regular cleaners/protectants i would add Ultima Interior Guard Plus, Leaterique (pricey but excellent), 1Z Leatherpfledge and Sonax Leather Foam.

I am a huge fan of Meguiar's for EVERYTHING...except their leather care. Not that its bad, I am just brand-loyal to Leatherique and Lexol. I wont use any other leather care product.
