It's what we made yesterday afternoon, and for those who don't know what it is, it's sort of like a wonton, but it's not enclosed, and it's steamed... quite yummy!
10oz of small shimp, coarsely chopped
2lbs of ground pork
1 tsb grated ginger (I used the stuff from the produce dept in a tube)
1 Tbs of minced garlic
1 Tbs soy sauce
2 (smallish) bunches of green onions, chopped
1 Tbs corn starch or potato starch
a few extras of what ever you have in the cabinet (what ever your favorite spices are)
1-2 packages of shumai or wonton skins
combine pretty much everything in to a large bowl and mix very well. I've found the best way to do this is to just dig in with your hands and squeeze and combine until it's well mixed. Yes it's pretty gross, but the results are well worth a lil discomfort.
Using a standard teaspoon fill the wrappers with a small ball of mixture. Make sort of a little bowl type of thing, leaving it open at the top. Tamp down both the top and the bottom so that they're flat(ish) Repeat as needed.
Here is a pic that I found where they appear to be uncooked.
Steam for about 10-15 minutes until done. Serve with soy sauce or what ever your favorite side substance is.

Those sound good exco. Might have to give them a try, though I'd have to try something other than ginger... gf hates it :smiledown:
