Height isn't really the big factor here. You can easily run a 34" tire on the factory suspension. You don't really "need" a level until you start getting into the 35" tires. The problem is the width. You are correct about some folks seeming to have issues and some not, however, the general consensus for the 06-08 trucks with OEM 20" rims is that 285 is the widest you can fit without spacers. There is a good thread on here from a member with an 07 that mounted 295/60/20 Trail Grapps and he had to run 1/4" spacers. The good news is that a 1/4" is all you need to run even 305's.

A 1/4" spacer isn't big enough to really cause any issues. Many folks have good luck with off the shelf cheapo spacers but Motorsports Technologies makes the best custom made hubcentric spacers that money can buy. There was a member on here with a set of them for sale recently if they are still available. Hope this helps.
