Default Tire size and Bilstein 5100 setting Question

Hi guys im new to Ram moved over from Ford and Chev. Just got a new 2013 Ram 1500 Lone star quad cab 4x4 and love it. My question is i just bought a set of Bilstein 5100 and was wondering what is the best setting 2.5 or 2.8 for this truck. Also i need to know if 295 65 20 will fit after i install them. Thanks for the help

Bilstein 5100 at 2.1, Cherry Bomb extreme. 37 13.5 18 mud grapplers 6" Zone lift 5" rear coils. Trinity 1000 hemifever tune. 3" PA body lift.
