My only complaint with copper is that you can't solder if there's a drop of water in it. Other than that soldering isn't a big deal 9 times out of 10. Copper also provides an electrical ground(they used to ground through the pipes). Copper is also "structural" being metal. Can't do that with pvc or pex. They all have advantages and disadvantages though.
