I'm having Scenic View Motors in Airdrie install my new dual system, they have done some good work in the past for me. I just need to figure out which headers I want. You can go with Magnaflow high-flow cats, and keep the enviro people off ya; and if you want to do duals, make sure they build a crossover pipe to balance the bank pressures. If you're curious about a shop, head in, and ask to see some of the in-progress work and take a good look at the welding, it can be very hit or miss. If it has a lot of porosity or doesn't cllok clean, you'll want to avoid that place.
