Also if its going in for say an automatic service, lightly mark a couple of the bolt heads that hold the pan on with a crayon.
Then you can see if a socket actually ever went onto those bolts.
Stuff like that is easy to do, and helps you know if they actually did any work or not.
As for never-seize on spark plugs. Yes, always unless you like headaches.
Most shops won't allow this due to insurance regulations. Sounds to me like you have some trust issues with your dealer.
