"stalling it up" is in reference to standing on your brake while bringing the rev's up. aka preloading the torque converter.
This will pull timing from the engine (that's a bad thing) and overheat your torque converter unneccessarily.
If you go too high you will be pretty much ensure the tires will break loose and you will sit and spin while the competition leaves you in your own smoke.

Like I said in my opening post, find a TRACK, hang out and learn from those who KNOW.
