Default Blown Head Gasket What Now?

I think I have a blown head gasket. I'm driving a 2004 Ram 4.7L with 83,000 miles on it.

I first noticed that I was loosing coolant and there were no leaks.
I next noticed that there was an inordinate amount of steam coming from the exhaust.
Then the engine would seem to lock up while I was trying to start, after a couple of tries it would crank up.
I never overheated the engine due to the fact that I kept filling the radiator with fluid.

I took the Ram into the authorized Dodge service center. They said Yup, most likely a head gasket, minimum $2,000.00 repair. But there's more, there is coolant in the oil the man said and that could have ruined your lower end. He's thinking engine replacement $7,000.00. He'll take a look and let me know.
My question is what are the chances of the latter?
