There are lot's of good all-terrain tires out there that look pretty aggressive but still have good highway qualities. My two favs are the Cooper Zeon LTZ and the Nitto Terra Grappler. If you are wanting bigger than the stock size you could go with a 275/65/20 which is one inch taller but the same width. You could also run a 285/60 or 285/65 but tire selection in those sizes is very limited and expensive. Anything wider than the 285 will likely cause rubbing issues unless you are prepared to run 1/4" wheel spacers.

The weight difference between the stock tires and any of the above sizes will be minimal so I don't think you will see any real difference in MPG and power. It's when you get into mud tires that you would probably notice these things. Some mud tires can weigh 1.5X as much as a similarly sized all-terrain tire.
