Engine teperatures will go to whatever they want to; T-stat can be full open at 200 degrees and it won't make a smit of difference what stat you are using. The fans and airflow provide the cooling , a stat is basically just an-on or off switch.
Lol, the stock tstats don't open until 203 degrees. I don't care how much air you have blowing on it (unless you're in sub zero temps)your engine won't run any cooler at operating temps (warmed up). If it were to never open and water didn't pass through the block you'd burn the engine up. Lol, why don't you prove your theory and just block off your tstat all together and let the fans keep it cool? Turn the switch off and show us, lol. A 180 will open up at that temp and the fans will assist in keeping it there. Water cools your block, fans cool the water. That's what a fan shroud does, it helps suck the air through the radiator fins to cool the water. And yes, air will help keep the engine cool, but without water you're engine would fry unless ur running alcohol.

When I ran a stock stat my truck ran at 205 during normal use. When I ran a 180 stat it ran at 185. Now I run a 170 stat and it runs at 170. That is all the evidence I need to prove that a cooler stat will affect engine operating temps.

OK, So has anybody with a 2012 Ram HEMI, without a tuner, run a 180 degree stat? How does it run? What did it do to MPG?

Actually you don't need the clutch fan either.

This is true, I removed mine and used my tuner to set my e-fan at 190.

I'm pretty sure that's what I just said! It doesn't matter WHAT stat you use; when the engine runs hot, it runs hot. It will have no effect on your ridiculous timing theory! It will open at 180 and try to stay there; or it will open at 195 and try to stay there! Either way, you will not damage your engine by running at 195 compared to 180.
