The truck is a bit soft on launch.

You shouldn't need the 3.92's to break the tires loose on a pick up truck (that doesn't have a ton of weight over the rear tires) with a large V8 under the hood.

As for the 07. The Hemi had 340 hp back then, and less torque than currently too.
I would not expect you to be able to break the tires loose on an 07 when it's tough to do it on a 13.

Hopefully the 8 speed auto rectifies this by having better gearing for low speed acceleration.
I wouldn't say it rectifies it, but it's definitely better than what you're describing. I can get my tires spinning on dry pavement, but not as much as you would think for a pickup with the power and torque that this has.

Actually, this has to do with the torque management on the engine. Even with traction control off, the engine is still limited to make the Truck more manageable, and to keep people out of trouble.

There is a fuse you can pull to turn this off (Look for any Dyno thread, people usually talk about this there) -- Or, once (if ever?) a tuner is released, you'll be able to flash this feature out.

Torque management is what is killing the burnouts. Removing the torque management makes then tuner alone worth the money, power gains notwithstanding.
