Why do people level their trucks? is it for looks only or more of a wheel fitment issue

Typically it's either to fit a larger wheel/tire combo, for the looks of it, or for the actual functionality you can get from the extra couple inches of lift and a more aggressive tire.

Yes, looks, fitting larger tires, and clearance.

bilsteins are definitely the most popular, but not the cheapest (still not badly priced tho)

cheaper would be a spacer kit like that from hell bent steal, rough country, etc.

bilsteins are awesome though!

Bilsteins for the rear are not like the fronts which are adjustables. Not sure if you know that, but thought I'd point that out.
Now the rear 5100 do allow for 1" additional of travel via a coil spacer but again, it's not like the front 5100 which you can physically adjust to your desired height.
