Default Bay leaf

Dave, this is not a post on using bay leaves, just want you to settle an argument I have with the wife.

I know that the leaves impart flavor to soups, stews, sauces, etc.

The argument comes in the form of this: She says to leave the bay leaf in the sauce/stew after it is done cooking and cooled. Hell, she looks at me cross-eyed for taking it out two days later.

My contention is: The leaf has given all it has to give as soon as the sauce cools, and it's time to get that potential lip-cutter out of there!

Your input would be great.

Always pull them out before actually sitting down to eat the dish/stew. We have Oktoberfest every year and our Goulash has a ton of Bay leaves in it. We leave them in all the way until we heat up the Goulash for placing in the warmers to hold until a customer orders a bowl. It is easier to pull them out after the dish is reheated as they usually have food stuck to them when they are cold.

Oh, never get in an argument with a Sicilian. Unless of course you have someone who will be dumb enough to start your car for you for awhile.

I always pull them out right before drawing the ladle on homemade spaghetti sauce .
But I have noticed that provino's let's you take them out yourself after the sauce is plated..
