Is there a noticeable difference between running 17' or 18's with 35's. Differences with gas mileage or anything that I should be aware of. Or better yet what are some of yalls preferences?

shouldnt be any differences.
i prefer the 17's, more sidewall and there are more tire choices in the 17's

I think 18's look great on trucks with 35's not to big, don't look to small like 17's either

You can't go wrong with either, but like foxcrazy said, it may come down to what size tires are available.

Rim size won't matter . Best thing I can tell ya is price the tires you want for 17" and 18" . That may help with your decision .

There'd be no ride difference, but as already stated, there are more options in 17" rubber at lower prices compared to the 18"

I know that larger rims = more expensive tires, but am I the only one that thinks this is crazy? There is LESS rubber there, so what gives? Why do they charge more for less tire? I can see charging more to mount them, because the rims are more, and there is more liability there. This has always stumped me. Personally, I miss my the 15's I had on my Jeep, tires were CHEAP!

Just for reference, here's my truck on 18's with Toyo A/T 285/75RX18 tires (34.7" per Toyo's specs) and a 4" lift. I like the ride and there's plenty of sidewall:
