You didn't give me a positive rep point, I had 44 then all of a sudden it dropped down one and I looked back at the usercp page and it shows you gave me a negative, here I attached a print screen showing you gave me a negative.

Sorry, I didn't see this post. Yes it's very possible. Air in the cooling system causes sporadic heat spikes at random times. You have air pockets circulating with the coolant and air pockets provide no cooling to the engine.

180 tstat for the 4.7L is JET part number 10177. I ordered mine from summitracing.com. It was the cheapest (I think ~$35). Pretty expensive for a tstat but it's "specific" for the 4.7L. You can buy a cheaper one meant for another engine and tweak it to fit, but for $15 just spend and get the proper one...

Again I want to reiterate a 180 tstat is a good idea, but not the root of your issue...
