Default oil pressure going whack

About a week ago i changed my oil in my 07 dodge hemi 5.7 liter with 165k miles. i noticed in my previous oil changes that jiffy lube has been putting 5w-30 in it, when the cap says 5w-20. I recently add 5w-20 like a normal human being. But now as I was on my way home my pressure gauge dropped to 0, then as i accelerated it increased back to normal. Now as a couple days of rest, it is now running high.

P.S i did check my oil levels, they were all normal, but i do not understand that it was running at 0 on idle then 2 days later of not running, on high at idle? Almost scared to take it down to street to let the motor warm up.

Any ideas let me know
