Default 180 tstat, throwing code

Have had the T-stat on with no problems for 2 years... until now. Throws the p0128 code "Coolant temp not reaching normal operating temp." I monitor my coolant temp via programmer and it is always at 179-186. Is there some underlying issue that's causing it to throw the code? Again it has been fine for 2 years until it just recently threw the code. After it threw the code for the first time I replaced the thermostat and thermostat gaskets as well, so the thermostat is new.

Edit: I delete the code when it shows, but it just becomes a nuisance having to continuously do it. It'll go a few days without throwing it, then one day it'll do it. Air temp has no effect either, It'll do it whether it's cold or hot outside.

it happens...it happens rarely for me (and only when it's cold outside) but I've learned to live with it..I get into a habit to let it warm up a little before I take off..

What does the gauge in your truck show? Could possibly be a faulty temp sensor.

Engine temp is always between 177 at the minimum and 186 at maximum upon warm up. On a side note, got the good ol' EGR code thrown today. Time to replace it, seems it made it a good ways at 97k miles.

Put the factory one back in and reset it, drive it around for a few days/weeks and see if it comes on againg . Maybe somthing else is wrong, simple test.
