Unhappy Call Me Crazy...But... (4.7L)

I have an 05 Ram 1500 Quad Cab 4wd 4.7
So the other day I am cruising along on the freeway at about 60-65mph, and all of the sudden my truck feels like its an airplane in a stall. Not slamming or pressing the brakes but loss of power, like the truck fell asleep. It fades down to say 40mph probably...(I was more worried about the Prius that was barreling down on my rear bumper, and passing me with a mean glare...) I WAS going up a very gradual highway incline...BUT my truck USUALLY would power up hills much worse than this with no problems. This problem occurs again for about 2 weeks. Then I get fed up. NO CEL, codes, etc. But plenty of angry or laughing glares.

SOO. I am thinking dirty fuel injectors. I run seafoam through the vaccum lines-it belches out white smoke for a bit-injectors are clean. I pour the rest of the can in the oil (Half) Will do an oil change soon, but it has had religious oil changes (Mobil 1) every 3000 miles since I had a NEW engine installed to replace the old HYDROLOCKED engine. (Another Story)
Current Mileage on new engine: 26000 btw

With the injectors clean, it happens again. And again. What gets me is there may be 50-60 normal miles between these "episodes" So I am guessing maybe a fuel pump going bad, or maybe a dirty sensor? (IAC...?)
It is basically stock, with a K&N filter on a short spectre metal tube. It also has a dual chamber muffler welded up and dumped below the cab.
My next course of action is going to be to check the fuel pressure. I might do the pump just as preventative maintenance as I don't want to get stranded offroading.
Maybe now would be a good time to do a 35 gal tank swap If I could only find one...
If the fuel pump is not the issue, I might need help. If it's not throwing codes, I don't think its a sensor is it?
Someone suggested to me something about a "Fuel System Limp Mode" Where all injectors fire and you get horrible gas mileage...
Anyway, Any help would be greatly appreciated. Until we figure this out I will assume it is Priuses with EMP devices

I may be wrong but I thought the only filter was on the pump in the tank. A mesh pocket?

Even that can be dirty.
Your description can be a fuel problem.
Interesting would be the fuel pressure when it happens. Can also be the pump.
Got my truck since 6weeks and had so far no reason to check for a filter but it would make sense that one should be in there.

you can pull the iac valve and hit it with some carb cleaner just to rule that out...same setup on mine with the K&N on short tube...my iac crapped out...no code just poor gas mileage and stalls.

Sounds more like catalytic converter problem. But I'm thinking that would throw a code on the aft O2 sensor, hmm, maybe not. Still sounds like the CC.
