Default Bogging down in lower RPMs

Sunday when I was coming home on my lunch break from work my truck started acting funny. From 1800-2000rpms around 35-40mph it bogs down and sounds like my truck wants to die, if i keep my foot on the gas and maintain speed it gets worse. The only way to get to come out of it is to step on the gas harder. The trucks idle really rough after I get it parked somewhere and let it sit for a few minutes. Sounds like its getting ready to die and the exhaust starts smelling really rich. I had a crack in my distributor so I replaced it and the spark plugs today got in my truck and test drove it. Ran fine then I went to the gas station down the street from my house and it started doing it again. I'm completely lost now and need this truck for work. I'm running pace setter headers and a Jegs Off road Y pipe with catalytic converter so I don't know if that could be messing my computer up. I've been running no cat for 6 months now without a problem.

Check engine light on? Have you pulled the plugs to check their condition?

Yes the check engine light was on but I disconnected the battery and it went away. I replaced all the plugs when I put the new distributor cap on it. My check light is something to do with my O2 sensors. It comes all the time after I make a long trip out of town on the highway.
