Default offset question

Hi everyone! Newbie here and I am hoping someone can help me out I have a '13 ram 1500 sport with NO leveling kit or lift. I am wanting new rims and have found some with a -12 offset. The backspacing is 4.53 I believe. I have 275/70R18 tires I need to use. I would like them to stick out a little more than the factory wheels/tires, but I have to be careful because I drive on gravel everyday. I have been told by some tire shops that this won't work and others say it will be fine. I don't know what answer is correct
Thanks in advance for any help!
Denise

Those tires are only 33.2"x10.8" which is only slightly larger than stock. You'll be able to fit those no problem on an 18x9 -12 offset rim. Keep in mind that they will be sticking out over an inch further than the stock wheel/tire set up.

Your new rims will sit 31mm further out than stock 20" rims. No issue other than rocks being thrown onto the side of the truck.
