They have gone up a lot in price since I first heard of him. They didn't show it in that video but he tempers the steel with liquid nitrogen then he puts it in the furnace. He does this back and forth several times.

I once cut the end of my thumb off with my best knife. The blade was so sharp it took a couple of seconds for it to register. That is probably like a plastic knife compared to his. I can't imagine cutting myself with one of his knives.

We have JA Henckels and love them. The set we got was on sale at Macy's for a good deal (I don't remember how much but it was like $40-50 off). They hold an edge for a long time and are easy to sharpen. We also have a fancy steak knife set in a cherry wood box that we got as a gift. They are Wusthof and are incredible. I would love to have a full set of their knives. Maybe in the future.

I bought Ginsu set, I been impressed for cheapies. I hide my 2 nice knives away. I still haven't trained my wife not to put the cheapies in the dish washer...

If this is your first nice set be warned, my father in law sharped (dulled) them within a month of buying them. My mother in law took them to my nonstick pans.

Life is what it is... I buy budget cook wear... I hide the nice stuff!
