I love salsa and especially from Chevys... Does anyone know how to make it ? thanks

Well I make three different salsas:

1. (my favorite)
two fresh mangos cut into chunks
cilantro
onion
fresh tomato chunked
chili powder to flavor
jalapenos chunked

2. Green Tamatillo salsa (sweet and spicy)
Tamatillos (green tomatoes wrapped in sticky green leaves)
cilantro
honey (to taste)
chunked jalapenos
1 tbs of garlic
two apples cored and chunked
onions chunked (optional)
lime juice (to taste)

3. Salsa fresca
onions chunked
tomato chunked
cilantro
jalapenos chunked (optional for heat)
1 tbs mexican chili powder (also only for heat)

All three let sit in a bowl in the fridge for at least three hours to get all the flavors to mix, I normally do over night for about 6 hours, really lets the jalapeno's heat sink in.

As for Chevy's salsa I have no idea... I haven't been there for over ten years, when I lived in Northern California

Yep, went out for lunch one day with my wife and asked for it... they didnt tel me anything, got my check and it was around $400...WTF? Waiter said, yeah, we charge $300 for the receipe.... I then told them to just keep it, I was not paying $300 for that. So I never found out. I have made tons of salsa but can never match it, now I see why...lol
I am going to try a batch next month and start fine tuning it for taste. My wife and I are planning a large garden at the new house and going to start canning, Im going to make salsa and sauces, she wants to can veggies and fruits.

Most restaurants won't give out recipes at all. I have tried pickling jalapenos. They came out fine except they turned out mushy. Tried everything and finally gave up and bought them pickled at the grocery store.

I tried the same thing about 20 years ago and finally gave up. I don't have a taste for mushy jalapenos.
