It is pretty simple as long as you don't break the sauce.

A basic recipe is:

2 garlic cloves
1 large egg yolk
2 teaspoons fresh lemon juice
1/2 teaspoon Dijon mustard
1/4 cup extra-virgin olive oil
3 tablespoons vegetable oil


Mince and mash garlic to a paste with a pinch of Kosher salt using a large heavy knife. Whisk together yolk, lemon juice, and mustard in a bowl. Combine oils and add, a few drops at a time, to yolk mixture, whisking constantly, until all oil is incorporated and mixture is emulsified. (If mixture separates, stop adding oil and continue whisking until mixture comes together, then resume adding oil.) Whisk in garlic paste and season with salt and pepper. If aοoli is too thick, whisk in 1 or 2 drops of water. Chill, covered, until ready to use.


You always want fresh lemon juice. If you are hesitant to use raw yolks you can buy Pasteurized egg yolks. Just make sure you buy the real ones and not the substitute egg product.

PS: I used to prep/cook in a restaurant in my early 20's. Upper middle class joint, with live jazz on Sundays. Head chef used to sing .. man what a voice. Gave me a small appreciation of what goes into running a kitchen. Interesting medley of skills and personality traits. Some days I miss it.

Depending on what kind of extra virgin olive oil you use it can be a very strong or overpowering flavor. The flip side is if you use just vegetable oil it may have a greasy mouth feel with no flavor. You can certainly experiment as long as the total amount of oil used doesn't change.

My mother was born in Italy and she returns twice a year to visit family. She brings me back olive oil, balsamic vinegar, and THE Parmesan cheese - Parmigiano-Reggiano. Fresh olive oil tastes amazing. It is also really, really green. It tastes like apple, fresh cut grass, almond and flowers to name a few. If you ever get a chance to go to an olive oil tasting "bar" I highly recommend it.
