Having 5 quarts come out...remember there is a quart in the filter and even if you dumped the filter there is a lot soaked into it. Had you checked the oil level before the change or recently?

No not until I changed the oil, it never occurred to me to check on a new truck. Should I have filled the new filter with oil then install it? Then add the remaining oil from the 7 quarts like usual.

I did my first at 1000 and went with Pennzoil platinum. Mopar filter and it took 7 1\2 quarts and I fill my filters. When I checked oil it was right on the money.

What did the mopar filter run? I used Mobil 1 extended performance filter it was like $13. I was going to use pens oil platinum but I went to 3 auto places and they only had 5w30.
