Default Tires for 2500, need advice

I tried searching, and found lots of 4x4 advice, but couldn't find anything for my truck. I have a 06 Ram 2500 quad lwb Hemi 5.7. It is a 2 wheel drive though. I guess there are not many of these, because when I was looking, I had some dealers tell me there was no such truck. Anyway, I wanted the Hemi, and now know I should have gotten the 4 wheel drive. It does have the limited slip rear end though. I race motocross and need more aggressive AT tires due to getting her stuck in the mud from time to time at the tracks. The length of the wheel base really adds to clearence problems as well. The stock tires are 245/70/17E and the 265/70/17e is also a standard option and comes on the models with more bells and whistles (I have the work truck model). I have just installed a front end leveling kit and it raised the front approx 2 inches (1 1/2 inch kit). I'd like to get wider and taller tires and have bought the stock rims from a friend who changed out the wheels on his 2010 4x4 2500, a slightly wider rim then my stock steel wheels, but still a 17 inche wheel. What is the largest size I can go? I was hoping to use 285/70/17E tires on the new wheels. Let me know what you would recommend? I also think Id probably need a new alignment due to the new leveling kit, and what can be done to recalibrate the speedo? Is it something I can do? Also, any suggestions for tires? Tirerack was usefull to look up tire sizes but I was not able to find anything that said what sizes I could go up to on this truck with the minor mods I made, the 1 1/2" front leveling kit and the slightly wider stock 2010 rims from Craigs list. Any way, Discount tire was fairly sure the 285s would fit, so I took it up there and figured if nothing else, I could always get the 265 if they didn't fit. So, after all said and done, including a realignment (from the sheet, it only looked like a toe adjustment) I have BFG 285/70/17E mounted on 2010 stock alum wheels with the front leveling kit. The front was raised from 13" (bottom of front bumper) to 16" and the rear just over an inch (tire increase only). Overall, I'm very happy with the look, and Im sure with the limited slip rear end and these tires, my getting stuck on wet grass days are over. Heres a few pics, I dont have any before pics, but its amazing how low the front was. After all said and done it cost me about $1,500. I have no rubbing or clearance issues.
