Default Proper Gearing and Highway RPM for 5.7

1500 ST, 5.7, 3.55 gears, 600 miles, factory 265/70/17
Notice that at 70mph I'm only running about 1,900 rpm. Motor only stays in 4 cyl mode when perfect flat or slight descent. If I come in the gas to pass, it drops two gears without pressing hard at all. Just seems like it's a bit sluggish. What RPM is ideal for this engine at highway speeds

Did I make a mistake with 3.55's. I've always been concerned with good mpg, so didn't want to go with low gears, but wouldn't expect the factory to put gears that cause the truck to be sluggish either.

My first full size truck, so maybe I'm just not used to the feel. Please help me out here experienced full size owners.
2010 QC ST, 5.7L, 4.10 Gear Swap, 5100 Leveling Shocks at 1.7", K&N Drop-in, Pioneer U310BT, 12" Dayton/Net Audio Sub, JL Components, ARC Audio Amps, Magnaflow 14 inch, Granite Alloys sporting 34" BFG T/A KO, HID conversion full blackout.

i drove both 3.55 and 3.93 before i decided on the 3.93 since i tow a 7000lb trailer, there is night and day difference, 3.55 was very sluggish, 3.93 gets up and go.
