I didn't put the stat back in till like a week later. I know i didn't bleed the air out of the system though. So what is a EGR valve?

Not bleeding out the air will cause the 4.7 to overheat. Make sure the air is out of the system. If your EGR were at fault, chances are the MIL would be on.

get your radiator rodded i did this and they found out it was blocked up really bad i had to replace it and now its smooth sailing
if your egr valve is bad it would stall out randomly i had to replace that already and it would throw a check engine light on the dash.
the radiator is what im thinking is the issue i had the same issues with it overheating on the freeway.
the radiator shop will most likely check it for free so u might as well if u catch it soon enough they might be able to rod it

and with the stat out wont it leak?
when i flushed my block i put the hose and fitting back on with out the stat and when i ran water thru it spraye out from between the block and fitting because the seal is on the stat.......

The seal may have gotten pinched.
