Default Over Heating Trouble

My truck is over heating. If I drive over 2000 rpm's the temp gauge rises. When I let off of the throttle the temp. gauge lowers. Just put a new clutch-fan in. When the trubo kicks in the temp goes up fast. Any suggestion?

Sounds like it could be a low coolant problem or air trapped in the system.
