Default Jumping engine temp?

Dont know if this has been answered but i searched and havent seen anything. here it goes.
I put a flowmaster (40 series) and a CAI on about 2 weeks ago. Besides the noise in the cab and a little vibration i am pretty happy with it. 4 days ago my engine temp gauge jumps from mid gauge to almost red. ( this has happened before usually right after start up then i turn the heater on and i hear a pop then it goes back to normal)
Now it is different... i commute 70 miles round trip and the engine temp gauge jumps from almost red line hot back down to mid gauge. I dont know if its cause of the small mods or what... Then today i started it up and the check engine light is on.... Now Im a little scared. Any one heard of something like this?

PS through my research the only thing i could find that was close was the coolant temp sensor is shorting..

Have you got the CHECK GAUGES light yet and does it smell like it overheating when it reaches redline? Were you able to pull the code to advise on the reason you got the MIL?

it doesnt smell different at all and i dont have a code reader. I have to wait til monday to take it to a buddies shop

If it is actually overheating you thermostat could be sticking. If you have a thermal gun you can point it at the rad when it spikes and see what the temp actually is. Only thing is I feel really nervous about doing engine damage with just trying things. Maybe you should consider pulling your thermostat and test it. If you put it in a pot of hot water, with a thermometer, you can slowly increase the heat until it stars to open. If it don't open well then you know your problem. Hope you figure it out without any engine damage

a thermstat is cheap...go ahead and change that out...and rule it out as the problem.. but i think that's your issue right there..
