The heads are very good and don't need to be changed. They can be ported for better flow, but that is about all they would need. Besides the basic mods you already listed, there are better throttle bodies and definately get a catch can.
I would do the intake/exhaust first.....wait for a tuner to come out for 2011's, then go for the head work cam headers and throttle body. Then have it custom tuned on a dyno or look into hemifever style email tunes.

ditto. You can't go too crazy on the motor without a tuner. They are still trying to crack the encryption codes so it might be a while. Until then headers, exhaust, CAI, tb, 180 t stat, and gears. When the tuner is available custom tune, cam, port the stock heads(they are good even for s/c engines), clutch fan delete, and maybe u/d pulleys...

Our stock intake manifold is plastic. No porting. You can change to the 6.1 manifold, but I wouldn't do it until after the tuners come out. Tb spacers are a joke and don't work. You can however get a ported tb from fastman for a good price. Your truck is really heavy so torque is your goal. Hp sounds nice but you want torque. My list for you would be CAI, headers if you buy the O2 sims to get rid of the cel, muffler, 180 t stat, tb if you want to, and gears if you want to. Other than that if wait for the tuner. If you want help with exhaust check out my build thread in my signature. It may be able to help with your plans...
