Welcome to the forum!

You can have the wheels drilled for your application or contact the maker and see if they can't hook you up with the 5 X 5.5" bolt circle. If not, then keep looking for a similar style that will fit. Don't try any of those adapters out there. You could get a nasty wobble at speed with those.

Nitto makes a good tire, the Trail Grappler. Cooper also has some good aggressive tires, the Zeon LTZ.

There are a lot of tire choices out there so take some time to check them out. Maybe visit your local tire stores.

If the rim has a 6 bolt pattern you cant really bolt them right up. You can buy an adapter to go from your 5 bolt pattern to the 6 bolt. Only thing with this is you will have a 1" spacer due to this. The adapters are not thin they might even be more then a 1". I would highly recommend going with a 5x5.5 bolt pattern instead of messing around with it. Also if you want to figure out how far rims wil stick out from the wheel wells you should find the offset of the rims. The stock rims are +20mm offset so anything less then that number will stick out from the truck. - offsets are great looking since the tires come out and give a great mean look.

The tires are really up to you. If you want to go with a good tire for a daily driver then go with BFG A/T KOs or KM2s, Toyo Open Country ATs, Nitto Trail Grapplers or anyother big name brand tire. I personally have always had BFG tires on my trucks. I love the A/Ts, they are quiet and comfortable and they can handle some mild offroading. I also have the BFG KM2s and they too are quiet and comfortable. I had my A/Ts for over a year now and they still have tread on them. Great tires for daily driver.

As for the Bilsteins, the front can be raised with the shocks. The rears cannot be used to lift the truck, they can be used for lifted rears. On the website they have 0-1" (I believe) ad this is for how much more travel they have over stock. If you want to raise the rear cheap then you should go with a set of blocks. The stock rears can handle being raised around 1"-1.5"
