I'm looking to get a set of 35"x12.5"x17" for my truck but I already have 305/70/r17 on it now and they rub a little when turning in reverse and turning on bumps. My truck has a leveling kit so I was wondering if I just got 3in coil spacers and putting a 1in block in the back if that would be enough? Also if I get the 3in spacer will I need to do anything else to the truck or will it be fine?

A leveling kit will help, but with stock wheels you will need a set of wheel spacers. I have 2" spacers and they make the tires stick out just enough to make it look bad ass lol.

Its already got a leveling kit but I didn't know if the extra inch of lift would strain things. Or would it be fine with it. My truck also have aftermarket wheels but I'm not sure how much backspacing they have.

I wouldnt advise going higher then a leveling kit up front. If you do your ride will suffer. Once you raise the rear as well the front will raise too. So you will have like a 3.5" lift up front without any suspension mods. If you want to go higher then 2" - 2.5" lift up front then you will have a shitty ride

3" on your truck is asking for true death wobble. If you could fin a 3" drop for the track bar or install an adjustable track bar you should be ok
You might need a drop pitman arm

Your wheels sound like they don't have enough backspace and offset. Definitely recommend against anything other than the leveling kit up front. Just get a set of wheel spacers and they should fit fine.
