That's correct. The electric fan will operate when the AC compressor is on, and also when the coolant temperature reaches 222 deg F (this really shouldn't happen ever...it's just overheating protection programming).
I (and others) have removed the mechanical clutch fan and are using superchips or diablo sport tuners to adjust the electric fan to come on at a lower temperature. I (and others) am using a 180 deg F tstat and this helps cooling even more. I've had no issues since I've been running without the mechanical fan, operating temps have actually been about 10 deg lower (since the lower temp tstat).
