I have the bilstein 5100 front adjustable shocks that I am going to have installed tomorrow. I was told that if they were struts I would have to have an alignment done, but since they are shocks it is not necessary. I have also read that after installing the 5100s it is recommended that you get an alignment. I am setting them at the 2.1" height if that matters.

To align or not to align? :4-dontknow: Reason why for the answer would be greatly appreciated. Thanks!

The entire strut has to be pulled and replaced. You absolutely will need an alignment.

Yeah, your going to need an alignment. With the extra hight you'll have positive camber that will wear the outside of your tires if you don't get an alignment.

in layman's terms, the bottom of your tires will be closer in. You can drive it for a few weeks if necessary. it doesn't feel weird. But the sooner you get the alignment, the better for even tire wear as has been stated already.
