Have a 2019 2500 8 speed 6.4l with 3.73 gears and 35x12.50 tires on it. Recently upgraded our small TT to a 5th wheel with a dry weight of just over 11k pounds. I never towed the new 5th wheel with the stock size tires and it tows pretty good with the 35s but some grades I’m not really happy with how much it has to downshift. Really just curious if getting rid of the 2.5 inch leveling kit and going down to a 33x12.50 would make a noticeable difference in towing?

I also have 3.73 with 35's. The 35's basically turn the 3.73 into 3.52. Or you could look at it this way: switching back to 33's would be like keeping the 35's but changing gears to 3.95.
As you can tell, I'm already looking at going back to 33's for when I do buy a TT.
