Just bought a trailer with brakes, it is a five prong connector so I got a seven to five prong adapter. Plugged everything in, all the lights work but the factory trailer brake says "no trailer connected" so I have no brakes. Anyone else had this issue and know what the solution is?

Because the five prong does not have a brake control lead, sounds like the trailers wiring is meant for lights only. The adapter you have allows you to connect the trailer lighting to your truck so the lights work to make use of the connector on your truck.

Only 7 Pins are available with brake controllers to my knowledge, but yet again I never see travel trailers or any RV using a 5pin. A 5 pin does have brakes as the diagram shows here . Maybe check through the wiring to see if a wire is broken somewhere. Tap into the brake wire on the trailers side of the 5 pin and have someone press down the brakes on the truck and see if it is getting current.

If your trailer only has a 5 pin plug, maybe you have surge brakes. There's a hydraulic or electric actuator in tongue and when you stop the weight of the trailer against your truck activates the brakes. There is no connection to the truck,

Did some more research and you are correct. The 5th wire diconnects the hydrolic surge brakes when backing up.
